Bean & Choritzo stew with Serrano wrapped monkfish

Bean & Choritzo stew with Serrano wrapped monkfish

Ingredients:

  • Olive oil
  • 1 x red onion
  • 2 x peppers ( red or yellow )
  • 3 cloves garlic
  • 8 -10 slices Choritzo
  • 1 x 400g tin chopped tomatoes
  • 2 x 400g tin butter beans
  • 1 x 400g tin cannelloni beans
  • Salt & pepper
  • Bunch fresh parsley chopped
  • 450ml chicken stock
  • 2x monkfish fillet ( any white fish )
  • 4 -6 slices Serrano ham

Chop onions , peppers , choritzo and garlic, fry in pan with olive oil until soft

Add tomatoes, beans, stock and seasoning. Leave to simmer gently for 60 minutes until reduced.

Season fish and wrap with Serrano ham.

Wrap fish loosely in foil to make parcel, drizzle with olive oil and place on baking tray in oven for 25 mins at 180 degrees. Open bag for last 5 minutes

To serve:

Place fish on bed of stew, serve with crusty bread.
