The perfect summer lunch…


Grilled herb and lemon chicken with Macho peas:

Lemon and herb chicken and mucho peas

For the chicken:

  • Chicken breasts x 4
  • Olive oil x 2 tbsp
  • Fresh herbs , I used mint,wild garlic,chives,parsley,oregano chopped
  • Juice x 1 Lemon
  • Salt & pepper

Lay the chicken between two sheets of cling film or backing parchment, flatten with rolling pin.

Chop the herbs, add salt and pepper, olive oil and the juice of the lemon, mix together.

Put chicken in bowl add the herb mixture and leave to marinade in fridge.

Cook on griddle or BBQ

For the Macho peas:

  • 1 bag frozen peas 500g
  • Fresh mint x 1 bunch
  • Fresh Curly leaf parsley x 1 bunch
  • 2 x red chillis
  • Good pinch salt
  • Olive oil x 3 tbsp

Boil peas until cooked.

In separate pan place oil, chopped chillis, and chopped mint and parsley.

Take 3 to 4 serving spoons of cooked peas and add to oil and herb mixture, mash roughly. Drain remaining peas and add herb mixture , mash roughly serve with the chicken.

Serve with potato wedges.

Summer fruit with meringue

Fresh raspberries , fresh strawberries , nectarine

Layer crushed meringue , fruit and cream.
