1 x Red cabbage (small or half)
3 x Peppers (orange, yellow & red)
1 x red Chilli
Small bunch coriander chopped
3 x Spring onions
Pineapple juice (100ml)
Glug of good quality maple syrup
Glug of good quality pumpkin seed oil.
Dash of salt
- Prepare and chop the cabbage, peppers, chilli, spring onions and coriander.
- Mix together in a large bowl.
- Prepare dressing – by whisking up the pineapple juice, lime zest and juice, maple syrup, pumpkin seed oil and salt. Then pour over the rest of ingredients and give a little stir.
- Sprinkle with a bit more coriander before serving.
