Stilton Stuffed Mushrooms

Stilton Stuffed Mushrooms (for four people)


  • 125 g of butter
  • 5 x shallots finely chopped
  • 150 g white breadcrumbs
  • 125 g Stilton cheese
  • 1 x tbs freshly chopped sage
  • 2 tbs freshly chopped parsley
  • 300 g open cup mushrooms

Preparation time:

45 min


  1. Preheat oven to 170°C (325°F)
  2. Melt butter in pan, add shallots and soften for 3-4 minutes
  3. Place bread in food processor and reduce to crumbs, add the softened shallots, stilton and herbs, process briefly to combine
  4. Remove the stems of the mushrooms, and then press the stuffing lightly into the caps
  5. Place on a baking tray and bake in a preheated oven for 35 minutes


Serve with salad leaf garnish
