The Main from the USA: Jambalaya


Our journey to find the tastiest food from around the globe continues in the USA with our Fat Tuesday Feast Main Course… Jambalaya (serves four people)

Jambalaya

Jambalaya 

Ingredients:

  • 3 tbs of butter
  • 0.75 lbs (340 g) smoked chicken andouille Sausage cut into 1 inch pieces (2.5cm)
  • 0.75 lbs (340 g) boneless, skinless chicken breast cut into bit size pieces – about 2 cups
  • 2 bay leaves
  • 1 cup chopped onions, celery and green bell
  • 1 tbs minced garlic
  • 0.25 tsp hot cayenne pepper
  • 1 tbs cajun magic/poultry magic
  • 0.5 cup canned tomato sauce
  • 1 cup peeled and chopped tomatoes
  • 2 cup chicken stock
  • 1 cup of uncooked rice

Instructions:

  1. Melt the butter in a 4 quart sauce pan over high heat
  2. Add sausage and cook until meat starts to brown, about 4-5 min. Stirring frequently and scraping pan bottom well
  3. Add chicken and continue cooking until chicken is brown, about 4 – 5 min
  4. Stirring frequently and scraping down the pan bottom as needed. Stir in bay leaves. Stir in the cajun magic/poultry magic and the hot cayenne pepper. Add 0.5 cup each of onions, celery, bell pepper and garlic. Cook until the vegetables start to get tender, about 6-8 min
  5. Stirring and scraping frequently, stir in the tomato sauce and cook for about 1 min, stirring often. Stir in the remaining half cup each of onions, celery, bell peppers and tomatoes. Stir in the chicken stock and rice, mixing well
  6. Bring the mixture to a boil, stir occasionally. Reduce heat and simmer covered over on very low heat until rice is tender, about 30 min
  7. Stir well and remove the bay leaves
  8. Leave to sit uncovered for about 5 min before serving
