Avocado & Salmon Stack
This a gorgeous tasting starter for the summer. Very simple to make with a flavour explosion in your mouth. Avocado and salmon contain the good fats and the chilli will help raise your metabolism so you burn calories quicker.
- Serves: 2
2 poached plain salmon fillets with skin removed
2 small to medium ripe avocados
Juice from 1 lime
1 red chilli finely chopped with seeds out.
Heaped tablespoon of chopped coriander
1 teaspoon of Dijon mustard
Put Avocados, lime juice, chilli, coriander & Dijon mustard in to a food processor and blitz for 5 to 10 seconds. You want this to be quite coarse and not a smooth paste.
Place a 3 inch food ring on to a small plate and fill with your mix then press down to form. If you don’t have a food ring then use a round pastry cutter upside down. Then simply place your salmon on top and garnish with coriander leaf or rocket and serve.
